Our family’s passion for jerky was built on the shores of Lake Coeur d’ Alene in Harrison, Idaho in the early 1920’s. Surrounded by the majestic mountains of North Idaho, my great grandfather designed and built his own unique wood smoker and before long he was known county wide for his exclusive and delightful smoked Kokanee. Local taverns would rejoice at the chance to get their hands on a jar of these fresh smoked salmon. My grand father eventually took over the operation but was soon drafted into the army during the Korean War. Upon his return he quickly gained a following and designed a signature brine mix that took 3 years to perfect. Hunters and fishermen would travel far and wide to get their meat smoked which continued for many years. The traditions of our family have grown and blossomed through my father who has further developed the brine mix and expanded the menu in his spare time.
As my military career has come to an end, I am thrilled to join my father in bringing our passion for quality jerky and smoked meats to your home. We use only the highest quality ingredients and try our very best to source locally, our jerky is smoked in small batches using my father’s enhanced recipes.
